Where HPP earns its place

Four categories, not nine. These are the priority sectors where the South West case is currently strongest, each here because there is a specific, defensible reason HPP matters for it, not because a longer list looks more impressive. If your product sits outside them, that does not rule it out — talk to us.

Seafood

Shellfish is the clearest case. HPP separates crab and lobster meat from the shell using pressure alone, no heat required, and it works on product going into the machine raw as well as already cooked. That is a yield and labour story as much as a safety one.

For fin fish and ready-to-eat seafood, the pathogen of concern is usually listeria, and HPP is well established for controlling it without cooking the product. Export reach is the other half of the case: a longer, more reliable chilled shelf life is what lets a premium UK seafood product travel further than the domestic market alone.

Fresh pet nutrition

Raw pet food is a fast-growing category built entirely on the claim that it is closer to what the animal would naturally eat. Cooking it to make it safe removes the thing it is sold on.

HPP is one of the few ways to meet the microbiological safety standards this category needs without heat treatment, which is why it keeps coming up as a natural fit wherever raw pet food volumes are growing.

Prepared meals

Retail-ready chilled meals live and die on shelf life. Every extra day on the shelf is fewer products written off before they sell, and more flexibility in how far a product can travel from where it is made.

HPP extends that life without heat and without added preservatives, which matters increasingly to retailers pushing clean-label requirements onto their chilled ranges.

Beverages

Cold-pressed juices and similar drinks are sold on nutritional integrity, vitamins and enzymes that heat pasteurisation degrades. HPP pasteurises without heat, which is the whole reason the cold-pressed juice category exists commercially at any scale.

The same logic extends to other premium, minimally processed drinks where a producer wants a real shelf life without giving up the thing that makes the product worth a premium price.

If your product sits in one of these categories, or close to it, the next step is working out whether it is actually ready for HPP.
